Ingredients You’ll Need

For the Sliders:

  • King’s Hawaiian Sweet Slider Buns
  • 16-oz ribeye steak
  • 2 tablespoons olive oil
  • 1 tbsp steak seasoning (Or salt, pepper, garlic powder)
  • 4 slices cheddar cheese
  • 1/2 cup Caramelized onions

For the Cowboy Butter:

  • 1/2 stick of unsalted softened butter
  • Juice of half a lemon
  • 1 tbsp garlic paste (or garlic powder)
  • 1 tbsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 2 tbsp chopped parsley
  • 1 tbsp minced thyme
  • 1 tbsp prepared horseradish
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Step-by-Step Preparation

1. Grill the Ribeye

  • Season the Steak: Rub the ribeye steak generously with steak seasoning. If you don’t have any on hand, use salt, pepper and garlic powder.
  • Grill to Perfection: For best results grill the steak over charcoal on medium high heat until the internal temperature reaches 130°F for medium-rare.
  • Rest: Allow the steak to rest for 10 minutes to retain its juices.

2. Caramelize the Onions

In a pan, heat 2 tablespoons of olive oil over medium heat. Add thinly sliced onions, salt, pepper, and a pinch of sugar. Cook on medium low until the onions are golden brown and caramelized. This should take about 20-30 minutes.

Be careful not to cook them too fast or too hot because they will burn. Take your time and cook them nice and slow which will result in onions that are nice and golden brown. They thick and jammy when done correct.

3. Prepare the Cowboy Butter

In a small bowl, combine the softened butter, lemon juice, garlic paste, Dijon mustard, smoked paprika, chopped parsley, minced thyme, horseradish, crushed red pepper flakes, salt, and ground black pepper. Mix until smooth and well combined.

4. Assemble the Sliders

  • Slice the Ribeye: Cut the rested ribeye steak into thin slices.
  • Build the Sliders: To the bottoms of the rolls or buns, add slices of cheddar cheese to the bottom layer, then a generous portion of caramelized onions, slices of ribeye steak, and a few dollop of cowboy butter.
  • Spread the butter over the steaks, then brush on more butter on top of the rolls before baking.
  • Bake: Preheat your oven to 350°F. Arrange the assembled sliders on a baking sheet and bake for 15 minutes until the cheese is melted and the buns are toasty.

Serve and Enjoy!

These Ribeye Steak Sliders are best enjoyed fresh out of the oven. The combination of sweet and savory from the King’s Hawaiian buns, tender ribeye steak, caramelized onions, and the zesty cowboy butter makes for an unforgettable BBQ treat.

Whether you’re hosting a summer party or just enjoying an easy weeknight dinner, these sliders will bring a burst of flavor to your table. Try them out with a side of onion rings or some pasta salad, and watch them disappear in no time!
