Chopped chicken bacon ranch sub

This chopped chicken bacon ranch sub is really easy to make and delicious. Similar to the Chopped Italian sandwich , all of the ingredients (Grilled chicken, bacon, lettuce, tomatoes, ranch, etc) are put onto a cutting board, chopped up and mixed together. Then it’s scooped into toasted sub rolls for an awesome meal. With each bite you get a bit of everything which makes them super tasty.

The great thing about this sub or any sandwich is you can customize it to your own taste. If you don’t like something, just don’t add it. If you want more of something, double up!

Grilled Chicken: I love the flavor of grilled chicken thighs, but use a rotisserie chicken and shred it up at home for a quick option.

Bacon: Extra crispy, thick cut bacon works really well.

Ranch: Use any store-bought that you want, or try my recipe for Homemade Ranch.

Lettuce and Tomato: Keeps everything fresh and balanced.

Cheese: I used shredded mozzarella cheese.

Bread: I used sub rolls I bought from the bakery, but use your favorite.

Making the chopped chicken bacon ranch sub

If you choose to grill the chicken, season it with your favorite bbq rub and grill them at medium high heat until they reach an internal temperature of 165°F. Having a good instant read thermometer will help you monitor the temps.

This would also be a good time to go ahead and toast any sub rolls you are using. I just place mine on the grill grates for a minute. You could also toast them in your oven.

Set the chicken and sub rolls aside and crisp up some bacon in a skillet. Get all the ingredients together for quick assembly.

Shred some lettuce and place that to the bottom of your cutting board as the base. Then start layer ingredients right on top starting with chicken.

After the chicken, I add crispy bacon and sliced tomatoes.

At this point, take a sharp knife and chop everything up really well. A butcher style cleaver works well but any chopping knife will do. Try to get the pieces even and most importantly be careful not to cut yourself!

Once these ingredients are chopped up, season with salt and pepper, then add shredded mozzarella cheese and ranch.

Then chop and mix one more time to get everything incorporated together.

Now all there’s left to do is scoop up a big pile of this chopped goodness and place them into your sub rolls. You get a little bit of everything with each bite.

Everything is mixed together well and they are delicious! Make these in no time and serve right away! You can also make these ahead of time and refrigerate the ingredients until you are ready to place them into the sub rolls.

Chopped chicken bacon ranch sub

This chopped chicken bacon ranch sub is fully loaded and packed with flavor. You get a bit of everything in each bite! Its so good!

Ingredients

  • 4 boneless, skinless grilled chicken thighs (Or any cooked chicken you prefer) 
  • 6 pieces of crispy thick cut bacon 
  • 6 slices of tomato 
  • 2 cups shredded lettuce 
  • 1/4 cup ranch dressing 
  • 1 teaspoon salt
  • 1 teaspoon pepper 
  • 1/2 cup shredded mozzarella cheese 
  • 1 tablespoon all purpose bbq rub 
  • 4 toasted sub rolls 

Instructions

  1. First season your chicken thighs with an all purpose bbq rub and grill them at medium high heat until they reach an internal temperature of 165°F.  
  2. Cook the bacon in a skillet until crispy and toast your sub rolls on the grill. 
  3. Onto a cutting board add a base layer of shredded lettuce, then add chicken, bacon, and tomatoes. Chop up everything, making sure its well mixed together. 
  4. Next season with salt and pepper, add mozzarella cheese, and ranch. 
  5. Chop and mix one more time to incorporate. 
  6. Scoop a pile of the chopped ingredients onto a sub roll and serve.

  1. I’m going to take this amazing recipe and tweak its perfection to be slightly more fat free. Making ranch from yogurt, 86’ing the mozz, and swapping the hoagie for a little less bread maybe open faced. This recipe is killer my dude!! Good job!
