Grilled bang bang shrimp and sausage skewers

When the weather warms up, it is the perfect opportunity to fire up the grill and enjoy some seriously amazing grilled Bang Bang shrimp and sausage skewers. This dish combines the sweet and spicy kick of bang bang sauce with all the flavor you get from the grill.

Whether you’re looking for an easy appetizer or a main course, these skewers will not disappoint.

Ingredients You’ll Need

For this skewer recipe, gather the following ingredients:

  • Jumbo shrimp, peeled and deveined
  • Kielbasa sausage or any precooked sausage, cut into slices
  • Wooden skewers soaked in water
  • Sweet Thai chili sauce
  • Mayonnaise
  • Honey 
  • Sriracha 
  • Green onions
  • Garlic powder
  • Kosher salt
  • Black pepper
  • Olive oil
  • Toasted Sesame seeds 

Preparing Your Skewers

  1. Prepare the shrimp: Start by peeling and deveining your shrimp. You can keep the tail on for easy grabbing later or remove them now.  
  2. Soak your skewers: Soak your skewers in water for at least 30 minutes before using. This ensures they will not burn on the grill or griddle. 
  3. Cut your sausage: Cut your sausage into 1/2 inch slices. 

Seasoning and Skewering the shrimp and sausage:

After you have peeled and deveined the shrimp, wrap it around each slice of sausage so it forms a “C” around it. Thread 3-4 shrimp and sausages onto each skewer, then drizzle with olive oil and season with salt, pepper, and garlic powder. 

​How to make bang bang sauce: 

Start with a generous dollop of creamy mayonnaise, which forms the base. Next, pour in some Thai sweet chili sauce, adding a burst of sweet and spicy goodness.

Add a little sriracha for that unmistakable heat and finish with a drizzle of honey to balance the flavors with a touch of natural sweetness. Blend all these ingredients together until smooth. Thats your bang bang sauce! 

Reserve this sauce for brushing onto the skewers while they are on the griddle and save a little extra for dipping later! 

Grilling the Skewers.

I’m using a griddle for this recipe but a traditional grill is great too! These cook in no time. Just place each skewer directly onto your grill over medium high heat.

Flip them back and forth allowing them to cook through evenly. The sausage is already cooked so they just need to be warmed up. The shrimp should be cooked to 165°F for safe eating. 

Just a few minutes before I remove the skewers off of the grill, I brush on the bang bang sauce to each side and let them cook for an additional minute or so on each side. Once that sauce caramelizes onto the shrimp and sausage, you are pretty much done! 

Don’t worry if the shrimp or sausage look a little charred. That just adds to the flavor.

Serving Suggestions

Serve your Bang Bang Shrimp Skewers hot, garnished with chopped green onions and toasted sesame seeds.

They make a perfect appetizer or can be served as a main course with rice, a side salad or grilled vegetables. The tender shrimp combined with the meaty sausage creates a nice contrast of flavors that will impress your guests.

Storing Leftovers

If you have any leftovers, store them in an airtight container in the refrigerator. They can be reheated in a shallow baking dish in the oven.

Tips for the Perfect Shrimp Skewers

  • Soak wooden skewers in water for at least 30 minutes before using to prevent burning.
  • Keep a close eye on the shrimp while grilling to avoid overcooking; they cook quickly, usually within 1-2 minutes per side.
  • Experiment with different types of sausage for varied flavors; andouille sausage adds a nice spicy kick.

  • 1 pound of large shrimp
  • 1 package of kielbasa sausage
  • 2 tablespoons olive oil
  • 2 tablespoons salt, pepper, garlic blend
  • 1/2 cup mayonnaise
  • 1/4 cup sweet Thai chili sauce
  • 2 tablespoons honey
  • 1 tablespoon of sriracha
  • 2 tablespoon sliced green onion
  • 1 tablespoon toasted sesame seeds


  1. Soak wooden skewers in water for 30 minutes to prevent them from burning.
  2. Peel and devein your shrimp. You can also remove the tails or keep them on if you prefer.
  3. Slice kielbasa sausage into 1/2 inch pieces. Wrap 1 shrimp around 1 piece of sausage so the shrimp forms a “C” around the sausage and then thread onto the wooden skewers.
  4. Drizzle shrimp and sausage skewers with olive oil and season with salt, pepper, and garlic powder.
  5. Make the bang bang sauce by combining mayonnaise, sweet Thai chili sauce, sriracha and honey together.
  6. Grill skewers on your griddle or grill over medium high heat. Flip them occasionally to prevent them from burning and to cook evenly. Once the shrimp is cooked to 165°F the skewers are safe to eat.
  7. Brush the bang bang sauce onto skewers  and grill for an additional minute on each side allowing the sauce to caramelize. Remove from heat.
  8. Garnish the skewers with toasted sesame seeds and sliced green onions. Reserve some bang bang sauce on the side for dipping. Enjoy!
